5 Valentine’s Day Truffle Recipes

Whether you are making treats for yourself or someone else this Valentine’s Day, these truffles are sure to satisfy your chocolate needs! These little nuggets of deliciousness are high in protein, have VERY little added sugar and are the perfect treat when you need a chocolate fix. I have developed 5 recipes, but seriously the only limit is your imagination. Also, please remember recipes are an amazing tool and resource, but they are more like guidelines anyways (to quote Pirates of the Caribbean), so feel free to adapt, change and modify as your heart desires. Just a couple of notes, I used cashew butter in these because it has a very mild flavor which makes it great for the more subtle truffles like matcha or turmeric chai. You can sub in any nut butter you want, you may just need to adjust the spices depending on the flavor you make.

RECIPE (makes about 25 truffles)

For the filling

½ cup cashew butter

½ cup chickpeas

1 tbsp maple syrup

Flavoring – see below

1.        Blend together until smooth.

Putting it all together:

1.        Choose your recipe

2.       Make the filling and roll it into 25 small balls

3.       Freeze for 5 min to firm up

4.      Using 2 spoons or a truffle dipper, dip in chocolate until coated

5.       Put onto parchment paper

6.       (optional) put in freezer for 5-7 minutes to speed up hardening process

7.       EAT and ENJOY!

For the chocolate shell

2 cups chocolate (white, milk or dark)

1 tbsp warm coconut oil

1.        Put the chocolate into a bowl and add the coconut oil

2.       Pour boiling water into a bigger bowl. Carefully place the bowl with chocolate into the bigger bowl so that the boiling water surrounds it but does not spill into the chocolate

3.       Mix until melted and smooth

*Note: you might be tempted to microwave the chocolate, which can have varying degrees of success. If you have done it before, go for it. If not, just stick to this method, trust me.

Cocoa nib Truffles

1 tbsp cocoa

1 tbsp cocoa nibs (optional)

1.        Mix cocoa and cocoa nibs into filling

2.       Roll in dark chocolate

3.       Put a cocoa nib on top (or sprinkle with cocoa)

Peanut Truffles

Sub in peanut butter instead of cashew butter

1tbsp crushed peanuts

1.        Mix peanuts into filling

2.       Roll in dark chocolate

3.       Sprinkle peanuts on top

Matcha Green Tea Truffles

1.        Add 1 tbsp Matcha to the filling recipe, blend.

2.       Roll in white chocolate

3.       Sprinkle matcha on top


Lemon Coconut Truffles

1 tsp lemon zest

1 tsp lemon juice

1 tsp oat flour (sub with any flour you want)

1 tbsp shredded coconut

1.        Mix lemon zest and coconut into filling recipe

2.       Roll in white chocolate

3.       Sprinkle lemon zest or coconut on top

Turmeric Chai Truffles

1 tsp turmeric

1 tsp cinnamon

½ tsp ginger

½ tsp nutmeg

1 tsp oat flour (sub with any flour you want)
